"I’ve always loved the blade on the 3.5-inch Shun Sheep’s Foot Vegetable knife, but I never had much luck using one because my knuckles were always getting in the way.
"So, I asked the folks at Kershaw if they could angle the handle upwards so that I could actually hold the handle and get the knife on the board. Although the knife looks a little funny, it functions perfectly.
"We decided to try the concept on two more knives, a 4-inch Paring and a 6-inch Utility and we discovered that not only does the ten-degree angle keep your knuckles off the cutting board, but the natural curve created between the blade and your arm makes controlling the blade easier and more precise."
