| Basil Lemon Halibut Recipe

Ingredients:
Halibut:
- 8 Cedar Cooking Wraps
- 8 Heat resistant bands (included with wraps)
- 1 pound fresh halibut fillet, cut into 8 (2 oz.) pieces
- 2 tablespoons prepared basil pesto
- 1 tablespoon grated lemon peel
- Extra Virgin Olive Oil to taste

Beans:
- 2 (15 oz.) cans Great Northern beans, rinsed and drained
- 3 cloves garlic, finely chopped
- 2 teaspoons grated lemon zest
- 1 tablespoon finely chopped fresh Italian parsley
- 1 tablespoon finely chopped fresh basil
- 2 tablespoons lemon juice

Directions:
- Heat grill to medium (350°F) using indirect heat*. Place cedar wraps in medium bowl. Cover with water; soak for at least 10 minutes.
- Place one piece of fish on half of each cedar wrap. Spread with pesto and sprinkle with lemon zest; drizzle with a bit of olive oil. Roll cedar wrap around fish; secure with heat resistant band.
- Place cedar rolls on grill. Grill for 8 to 10 minutes, turning once, until halibut is opaque. Meanwhile, mix all bean ingredients in medium saucepan; cook over medium heat until hot.
- Serve two cedar rolls per person. Place on plate; cut band to open the wraps and serve with beans.
*To bake, heat oven to 350°F. Place cedar rolls on baking sheet; bake for 10 - 12 minutes or until desired doneness.
