A carving knife is also known as a carver, slicing knife, or a slicer. It is a long, thin knife that is ideal for slicing large roasts, turkeys, hams and other meats. The thin blade allows for more control than a chef's knife, offering the ability to cut thin slices from your cooked meat. The blade of a carving knife usually ranges from 8" to 12", but can sometimes be longer. The blade may have a pointed or blunt tip. Some blades of carving knives have a granton edge. These edges feature dimples that allow air to get between the blade and the meat, helping to prevent the meat from sticking to the blade as you slice.
