The Chefs Choice 1520 is an electronic knife sharpener that has three slots in it. A lot of times these days, people are buying knives of different styles and from different manufacturers. They end up with different angled knives and this sharpener solves the problem rather than having two machines with different angles. Now, the angle is the bevel on the cutting edge. There are Asian style, and there are American and European-angled knives,all needing to be sharpened at different angles. What Chef's Choice did is they developed this 15/20 angle-select product that allows you to accommodate all styles of knives that are in any household.
You have three stages: There is a starting point, which is coarse. And there's a finishing slot for polishing it off. I don't recommend using the first stage all the time, but you can use the last stage to hone or to polish the edge of the knife.
A lot of people are not prone to sharpening their own knives; they either take them out or they run them over something that may not be adequate for the knife that they're using. Chef's Choice takes the guesswork out of doing that process and always gives you consistent results time-and-time again.
This unit is well worth the price because it does the European/Asian style, it does sporting/pocket knives, and it also allows you to do serrated knives in the last stage. I really like this sharpener because you don't have to know anything about sharpening knives; you don't have to know anything about bevels.
