Original Panettone Recipe

Original Panettone Recipe from Kaiser Bakeware

  • 2 1/4 cups flour
  • 1.5 oz yeast
  • 3/4 cup lukewarm milk
  • 1/2 cup sugar
  • 8 1/2 Tbs butter
  • 3 egg yolks
  • 1 tsp salt
  • 1 pinch grated nutmeg
  • 1 grated peel of a lemon
  • 1/2 cup candied lemon peel
  • 1/4 cup candied orange peel
  • 3/4 cup raisins
  1. Sift flour into a mixing bowl and make a well in the middle. Crumble yeast into hollow and blend in a little sugar and flour. Add milk. Cover mixture and set aside to rise in a warm place for about 15 minutes.
  2. Stir melted butter, egg yolks, remaining sugar and flour, spice and lemon peel in with the initial mixture. Allow dough to rise for about 30 minutes.
  3. Knead in candied orange, lemon peel and raisons. Put dough in to a Kaiser greased Panettone pan. Allow dough to rise for 30 minutes.
  4. Bake cake in the middle of oven, at 350 degrees F. for 20 minutes. Cover with greaseproof paper and continue baking for 25 more minutes.
