Tech Edge operation
The main goal of Tech Edge is to maintain super-sharp cutting edges, as accurately and quickly as possible, with the minimum of blade material removal. Therefore, it is best to use the Tech Hone stage as much as possible (for fine honing, with little metal removal), and the other two stages only when an edge needs some reshaping or coarse honing.
Simple everyday method for those who own Tech Edge:
- Work backwards through the Tech Edge stages!
- Try 6 strokes through the Tech Hone Fingers first; this is the best stage to use most days.
- If this doesn’t make the edge as sharp as you want, lightly reshape the worn edge with 6 strokes through Diamond Fingers. If the edge feels sharp, finish hone with 6 strokes through Tech Hone.
- If Diamond Fingers doesn’t make the edge feel sharp enough, reshape the edge with the Tech Edge Restorer until it is sharp (test the edge for sharpness after every 6 strokes), then finish hone with Diamond Fingers and Tech Hone.
- Once an edge has been restored through all 3 Tech Edge stages, it will rarely have to go back to Diamond Fingers or Tech Edge: Tech Hone alone should be able to maintain a very sharp edge for a long time (eg. 3-12 months in the home).
- So, most days, you will only need to give the knife 6 strokes through Tech Hone: simple and fast!
If a knife is already dull, and hasn’t been sharpened with Tech Edge before:
- If a knife has been sharpened/honed with traditional manual methods, or by gadgets, or by some professionals, you can assume that it will need some reshaping of the edge to create accurate angles. (The regular process of honing on the Steel is usually causes the most damage: human error with the angles ensures that the edge will be ‘rounded’ and need reshaping regularly.)
- Start with 6 strokes through Diamond Fingers and test for sharpness. If sharp, finish with Tech Hone.
- If not sharp yet, do 6 strokes through Tech Edge Restorer, test for sharpness, etc.
- This method ensures that the minimum of material is removed: as soon as the knife ‘feels’ sharp, it needs no more metal removal, just finishing with the honing stages.
