Harvest Pork Roast

Center an autumn meal around this juicy roast and seasonal vegetables. The easy topping of applesauce and Dijon mustard keeps the roast moist and adds flavor while it bakes.

Ingredients:
  • 1 cup applesauce
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • Freshly ground pepper
  • 3 pound boneless pork roast
Directions:
  1. In a medium bowl, mix together applesauce, mustard, salt, and pepper to taste. Place pork in a roasting pan. Spread applesauce mixture on top, covering the roast completely. Let stand 1 hour at room temperature.
  2. Preheat oven to 350F. Place roast in a large roasting pan with a rack. Bake, uncovered, until meat is browned and slightly pink on the inside, 150 to 155F, about 1 1/4 hours. Transfer to a platter and let stand for 10 minutes before carving.
Serves 6
