Ingredient Substitutions

So, we've all been there. We have the cake batter half mixed, and only then do we realize we're missing one of the ingredients. Or we've started that new recipe for the dinner party, then find out that what we thought was in the pantry, isn't. So what do we do? There's always the corner market...if you are lucky enough to have one closeby. Or you can substitute. Some of the more common substitutions are listed below for your browsing pleasure. (corner market not included!)

Ingredient Substitutions

Cream Cheese
AnyPart skim milk ricotta cheese or
cottage cheese, blended smooth

3 tbsp. oil + milk to = 1 cup
1 cup evaporated milk
1 Cup3/4 cup milk + 1/3 cup
butter or margarine

2/3 cup buttermilk + 1/3 cup oil
Evaporated skim milk or equal
amounts of skim milk, ricotta cheese,
and nonfat yogurt beaten until smooth

whipped until smooth
Milk, Sweetened
1 Can(1 1/3 cups)1/3 cup + 2 tbsp.
evaporated milk, 1 cup sugar +
3 tbsp. butter(heat until
solids are dissolved)
Add 1 cup + 2 tbsp. dry
milk powder to 1/2 cup warm
water. Mix well. Add
3/4 cup sugar and stir
until smooth
