The blades of Kikuichi Tsuchime Knives feature sixteen VG10 high carbon steel and stainless steel layers, which are worked together for strength and durability and which give the knives their signature damascus look. The blades are then hand-hammered and tempered, making each Tsuchime blade truly unique. Known as Tsuchime, this unique dimpled finish prevents food from sticking to the blade as you cut and slice. This combination of metals and the various processes used to create the blades gives the knives a Rockwell Hardness of 60.
