Recipe: Raspberry Clafoutis

Ingredients:

  • 2 teaspoons cornflour
  • 100 g / 3 ½ oz milk
  • 2 eggs + 1 yolk
  • 60 g / 2 oz caster sugar
  • 3 cl / 2 tblsp Grand Marnier
  • 100 g / 3 1/2 oz crème fraiche
  • 250 g / 9 oz raspberries


Directions:

  1. Dissolve the cornflour in the cold milk.
  2. In a bowl, mix the 2 eggs, the extra egg yolk, caster sugar, cornflour and milk, Grand Marnier and the crème fraiche.
  3. Divide the raspberries evenly between the 4 individual pie dishes, then pour the pixture over them.
  4. Cook at 180°C / 360°F (gas mark 6), for 15-20 minutes.
