Recipe: Thai Shrimp & Pineapple Skewers

Serves 4

Ingredients:
  • 4 Thai Coconut Lime Seasoned Skewers
  • 1/2 cup beer
  • 1 pound very large shrimp (about 16 per pound) peeled and deveined
  • 12 chunks (1 1/2" pieces) fresh pineapple
  • Salt and pepper to taste
Directions:
  1. Soak skewers in beer for 10 to 15 minutes.
  2. Thread onto a skewer in the following order: shrimp-pineapple, using one piece of each.
  3. Repeat two more times and then add one more shrimp to secure the pineapple.
  4. Repeat with remaining skewers.
  5. Let sit for 10 - 20 minutes in refrigerator.
  6. Lightly brush skewers on each side with salad oil and season to taste with salt and pepper.
  7. Place on a preheated medium-high grill and cook until shrimp are just cooked through, about 3-4 minutes on each side.
Chef's suggestion: serve with steamed jasmine rice or pad Thai noodles.
