Recipes for Cedar Grilling Planks

Here are some great recipes to try with your Cedar Grilling Planks: The Perfect Salmon

Ingredients:
  • 1/2 pound salmon fillet
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon paprika
  • Juice from 1/2 lemon
  • 3 sprigs fresh dill
Directions:
  1. Sprinkle seasonings and squeeze lemon juice onto salmon fillet.
  2. Lay the sprigs of dill on top.
  3. Carefully place the fillet on the pre-heated plank in the barbecue, and close the lid.
  4. Cook for 15 minutes or until done.

This is Trout

Ingredients:
  • One or two whole trout (1 to 1 1/2 pounds each)
  • 1 medium onion sliced thinly
  • 2 sprigs fresh dill
  • 1/2 teaspoon salt & pepper
  • 1/2 teaspoon powdered horseradish
  • 2 Tablespoons melted butter
  • 4 Tablespoons white wine
Directions:
  1. Prepare the trout by filling the slit belly with the sliced onion, dill, 2 Tablespoons each white wine, salt, pepper, horseradish, and butter.
  2. Follow instructions for plank preparation.
  3. Heat plank for about 5 minutes on barbecue.
  4. Carefully lay the fish on the hot plank and close the lid.
  5. It will take about 20 minutes to cook.

The Sweeter Taste of Fish

Instructions:
  • 2 Tablespoons white wine
  • 2 Tablespoons lemon juice
  • 2 Tablespoons brown sugar
Directions:
  1. Mix together white wine, lemon juice and brown sugar.
  2. Use any medium to firm textured fish fillets (should be about 1 inch in center of fillet).
  3. Spoon mixture over fish and refrigerate for 1 hour.
  4. Prepare and heat plank.
  5. Place fish on heated plank.
  6. Cook for 20 minutes on medium high or until done.

Chick or Cornish Hens

Ingredients:
  • Whole chicken, cut in half lengthwise
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1 teaspoon dried rosemary
  • 1 Tablespoon Parmesan finely grated
  • For a spicy taste - 2 chilies chopped
Directions:
  1. Lift the skin next to the edges of the chickens and push in the chopped chilies.
  2. Mix the seasoning together in a small bowl and pat onto the skin of both halves.
  3. Prepare the plank and heat it on the barbecue.
  4. Carefully place the chickens cut side down on the hot plank and close the lid.
  5. Leave it on medium high for 10 minutes, then turn it down to medium low for about 45 - 50 minutes. *If the chicken is very large, leave it for an extra 10 - 20 minutes.
  6. Test the leg with a fork to be sure it is fully cooked.
For Cornish hens:
  • They can be left whole.
  • Cooking time if whole will be the same as the chicken above.
  • If halved, cooking time is about 20 minutes on medium low after the initial medium high heat for 10 minutes.

Tasty Pork Chops - Oh So Moist

Ingredients:
  • 2 - 3/4" to 1" thick pork chops
  • 4 oz. melted butter
  • 1 Tablespoon black pepper
  • 1 large apple thinly sliced
  • 6 Tablespoons mango chutney
  • Salt to taste
Directions:
  1. Soak the plank for 30 minutes.
  2. Pre-heat barbecue to high.
  3. Brush one side of the chops with butter, and place butter side down on plank.
  4. Brush the top side of chops with remaining butter and cover with the apple slices.
  5. Spoon the chutney on top.
  6. Set the wet plank carefully on the hot grill and cook at medium high heat for 10 - 15 minutes.
  7. Turn down heat to medium low and cook for 30 minutes or until done.

Babyback Rib Delight - Use Beer, Coffee, or Coke

Ingredients:
Directions:
  1. Marinade the slab of ribs in a cup of beer, brewed coffee, or Coke for about 8 hours covered in the fridge.
  2. Make a dry rub with the powdered ginger, paprika, sugar, salt, allspice, and black pepper.
  3. Prepare the blank and set on barbecue to heat for 5 minutes.
  4. Place the ribs on the plank and leave at medium high for 10 - 15 minutes.
  5. Turn the heat to medium low and cook for about an hour or until the ribs are tender.
  6. Brush them with your barbecue sauce and leave for a further 10 minutes at a medium low temperature.
  7. Serve at once.

Easy Homemade Barbecue Sauce for Planked Ribs or Pork Chops

Ingredients:

  • 1 Tablespoon olive oil
  • 2 Tablespoons honey
  • 1 medium onion chopped fine
  • 2 Tablespoons mustard (hot or not)
  • 2 cloves garlic, minced
  • 1/2 cup water
  • 1/2 cup tomato paste
  • 1 Tablespoon paprika
  • 1 cup tomato puree
  • 1 Tablespoon black pepper
  • 3/4 cup red wine vinegar
  • 2 Tablespoons Thai Kitchen Spice or Chili Powder
  • 4 Tablespoons brown sugar
  • 2 Tablespoons Worcestershire sauce


  • Directions:
    1. Saute the onions in the oil, add garlic, and cook for a minute more.
    2. Add the remaining ingredients and simmer for about 30 minutes, stirring frequently. The mixture will thicken.
    3. Brush ribs or pork chops while on the plank for the last 10 minutes of cooking.
    4. Serve extra on the side, warmed.

    Cedar Planked Salmon from the Grill

    Ingredients:
    • 2 tablespoons vegetable oil
    • 1 tablespoon soy sauce
    • 3 tablespoons, choice of chardonnay, bourbon, or whiskey
    • 1/2 teaspoon ground ginger
    • 1 tablespoon brown sugar
    • Freshly ground pepper to taste
    • 2 pound salmon fillet
    • 1/2 teaspoon lemon juice
    Directions:
    1. Combine all liquid and dry ingredients in a bowl; reserve lemon juice. Blend and set marinade aside.
    2. Remove any pinbones from salmon. Leave whole or cut into individual servings. Place into a shallow dish, add marinade and turn to coat. Cover and let sit 20 minutes.
    3. Preheat plank. Carefully lift lid and place salmon, skin down, on plank. Return the lid and let hot-smoke for 8-10 minutes or until done.
    4. Glaze: Transfer marinade to a small sauce pan. Gently simmer on stovetop till reduced by half. Remove from heat and add lemon juice. Brush or drizzle onto salmon before serving.

    Ingredients:
    • Butter
    • Brown sugar
    • Lemon
    • Salt and pepper to taste
    Directions:
    1. Melt butter.
    2. Place salmon onto hot plank.
    3. Over fillet: drizzle butter, sprinkle sugar, squeeze lemon juice and season with salt and pepper.
    4. Hot-smoke 8-10 minutes or until done.
