The Secret To Perfect Roast Turkey
TWO TECHNIQUES, ONE RESULT - PERFECT ROAST TURKEY! There are countless recipes and techniques for cooking a holiday bird. We have two favorites.
SLOW ROASTING - PARTS ONLY PLEASE. The first method slow roasts turkey parts. Because the dark and white meat cook to different internal temperatures, this method ensures you get fully cooked and succulent dark meat while your breast meat stays tender and juicy. Itís also a great way to get everything done in less time, roasting parts takes approximately 2- 1/2 to 3 hours. Using parts instead of a whole bird makes carving easier, as well. So, if you donít carve your bird at the table, this is the technique for you.
TEMPERATURE IS EVERYTHING. Heat oven to 275˚, place a wire rack into a rimmed baking sheet. Refer to our Perfect Gravy page for the vegetables, herbs and stock needed. Brush turkey pieces with melted butter and evenly sprinkle with kosher salt and freshly ground pepper. Place turkey breast skin side down and thighs and drumsticks skin side up onto wire rack. Roast for one hour, then flip turkey breast skin side up using turkey lifters. Insert the probe of Polderís Digital Timer & Meat Thermometer, set alarm temperature to 160˚ and remove when alarm sounds. Then place probe into the thickest part of a thigh and set alarm to 180˚.
GETTING READY TO SERVE. Allow turkey pieces to rest 30 minutes or up to 1-1/2 hours. Heat oven to 500˚ about 40 minutes before you are ready to serve. Place all of the turkey pieces, skin-side up, back into the oven and roast for about 15 minutes, until skin is golden brown and crispy. Let rest 20 minutes. Carve the dark meat first and then the breast.
