Wusthof has created a knife sharpener that is perfect for Asian knives. The Wusthof Santoku Knife-Life Knife Sharpener will sharpen fine edge knives, even those with a hollow-ground/granton blade. It works for both right- and left-handed users. The Knife Life also has a built in scissors sharpener.
The Knife-Life Sharpener has two stages. The first stage has a coarse ceramic notch that sets the edge. The second stage finishes the edge with the fine ceramic notch.
To use the Wusthof Santoku Knife-Life Knife Sharpener:
Place the sharpener on your countertop or other flat work surface and hold firmly with one hand. Holding the knife handle with the other, insert the knife blade fully into the first slot. Be sure to keep the blade at a 90° angle to the sharpener.
While applying moderate downward pressure on the blade, steadily pull the knife towards you.
Repeat step 2 a few times. Be sure to pull the blade all the way from heel to top. Never push tip to heel.
Repeat steps 1-3 for stage 2.
