| All fine edge cutlery requires maintenance and sharpening. A sharp knife can easily be maintained by adhering to a few basic rules:
- Cut only on soft surfaces such as wood or poly boards. Hard surfaces like glass, granite, stainless steel, acrylic, and laminate countertops will dull knifes immediately upon contact.
- Always avoid cutting frozen food, slicing into bones, or using a knife to pry things open. These uses will result in severely dulling, bending or breaking your knife.
- Use the Wusthof Knife Life Sharpener periodically to maintain a sharp edge on your knife.
The Knife Life Sharpener is for both right and left handed use.
This two stage knife sharpener from Wusthof includes a scissors sharpener built-in. The carbide side sets your knife's edge, while the ceramic side finishes the edge. The scissors sharpener will sharpen both blades for left- or right-handed scissors at the same time. The E-Z grip handle and non-slip rubber feet helps to keep the sharpener in place and safe to use.
