Combining the legendary commitment to craftsmanship that Zwilling J.A. Henckels is known for with the grand tradition of Japanese blademaking, this unique collection combines strength and versatility with scalpel-like sharpness to give you supreme performance. Each blade is crafted from durable VG-10 steel that is then wrapped with 64 layer flower damascus steel which is put through a 4-step Cryodur hardening process to maximize edge retention and durability. This hardening is done in a vacuum furnace, then the blade is brought down to room temperature in seconds before being cryogenically frozen to 321° F to enhance corrosion resistance. This gives each knife a Rockwell hardness of 60. The blade is then hand finished with a katana edge using a 3 step Honbazuke method. The edge is then honed by artisans who create a 9.5-12° per side, giving it superior sharpness.
