Every chef knows that a great knife is of the utmost importance in the kitchen. It is the most essential and trusted tool in any cook's collection and should feel as though it is an extension of your arm. The new Zwilling J.A. Henckels Miyabi Kaizen Series does just that. Combining the legendary commitment to craftsmanship that Zwilling J.A. Henckels is known for with the grand tradition of Japanese blademaking, this unique collection combines strength and versatility with scalpel-like sharpness to give you supreme performance. Each blade is crafted from durable VG-10 steel that is then wrapped with 64 layer flower damascus steel which is put through a 4-step Cryodur hardening process to maximize edge retention and durability. This hardening is done in a vacuum furnace, then the blade is brought down to room temperature in seconds before being cryogenically frozen to 321° F to enhance corrosion resistance. This gives each knife a Rockwell hardness of 60. The blade is then hand finished with a katana edge using a 3 step Honbazuke method. The edge is then honed by artisans who create a 9.5-12° per side, giving it superior sharpness. The blades are coupled with a black linen Micarta D-shaped handle that features a mosaic pin, red spacers and a metal end cap, signifiers of its traditional Japanese heritage. hide...
