Go Big Green Egg, GREEN!

I have two friends that took the plunge last summer - both bought a Big Green Egg. And, I’m here to tell you that their EGGS have made them "instant-grammers." If you're not sure what that means, log into Instagram, search #biggreenegg and you’ll see all the fun you’ve been missing.

These two friends have become grill masters in short order and are now the go-to destination for our smoke cravings. From traditional smoked Texas brisket to a chuck eye steak with just a hint of smokiness, the EGG delivers. Never heard of, or tasted a chuck eye steak? I'll have more on that topic in an upcoming post where I'll delve into all the tastiest cuts of beef, and how best to cook them. This forthcoming post will also include a bit about a butcher I recently discovered from Nashville that launched an online shop, Porter Road. The steaks ship fresh, not frozen, in their own biodegradable cooler and are A-M-A-Z-I-N-G, including my favorite, the Chuck Eye. Think beyond T-bones and Strip steaks, folks!

These butchers expertly hand-cut all their meat in Kentucky with minimal waste. "Nose to Tail", as they say. No factory farming here. The beef is pasture-raised, in Tennessee and Kentucky without hormones, antibiotics, or GMO feed. I’m getting ahead of myself here, but you better make sure you are all signed up, so you won’t miss this mouthwatering all-beef post. Ok, pork, lamb and chicken are also on the menu.

Back to the topic at hand — The Big Green Egg. Owning and loving your EGG has reached cult-like status among its many fans across the globe, as this Instagram post from Finland illustrates. That’s some serious dedication to the flame right there.

I may need a refresher on my Finnish, but I believe the loose translation is "that dude's cooking some awesome ribs." @biggreeneggeu

Big Green Egg & BBQ Ribs

What better way to begin your #biggreenegglife and celebrate St. Patrick’s Day than with this Corned Beef & Cabbage recipe, courtesy of the folks from Big Green Egg. Believe me when I tell you this won't be the last brisket you cook on your EGG.

Corned Beef & Cabbage on the EGG

Ingredients  |  Print

  • 3 pounds corned beef brisket with spice packet
  • 1 can or bottle Irish Stout
  • 10 small red potatoes
  • 5 carrots, peeled and cut into 3-inch pieces
  • 1 large head cabbage, cut into large wedges
  • 2 bay leaves

Instructions

Set your EGG for direct cooking at 450°F/232°C. Place the corned beef in the Dutch oven and cover with water and the stout; add the spice packet that came with the corned beef and cover. Place on the cooking grid and bring to a boil, then reduce the temperature to 350°F/177°C. Simmer approximately 50 minutes per pound or until tender.

After two hours, add whole potatoes and carrots, and cook for 15 minutes. Add cabbage and cook for 15 more minutes. Remove meat and let rest for 15 minutes.

Place vegetables in a bowl and cover with some of the broth. Slice meat across the grain and serve with warm bread.

Easter’s coming so how ‘bout a Big Green Egg & Ham?

A traditional and smoky favorite is elevated when cooked on the Big Green Egg. After one bite you'll agree...“I do so like green eggs and ham. Thank you. Thank you, Sam-I-Am.”

Smoked Ham on the Big Green Egg

Ingredients | Print

  • 7-12 lb. bone-in ham, not spiral sliced
  • 3 cups apple juice - water or other juice can be used
  • 2 cups of apples, oranges or other fruits, cut into small pieces

Instructions

Set the EGG for indirect cooking with the convEGGtor at 275°F/135°C with Big Green Egg smoking chips. We recommend the apple smoking chips.

Fill a drip pan with the juice and fruit and place on the convEGGtor.

Score the fat portion of the ham in a checkerboard pattern, making cuts approximately 1 inch apart, and 1 inch deep.

Cook for approximately 1 hour for 2 lbs. of weight. During the last hour of cooking, brush ham with the glaze. Remove when the ham has reached the internal temperature of 155- 160°F/68 – 70°C.

Let the ham rest before serving.

Glaze for Ham

Ingredients

  • 1 cup brown sugar
  • 1 tsp black pepper
  • ¼ cup of bourbon
  • ¼ cup of syrup
  • 2 tbsp of brown mustard

Instructions

For the glaze mix all the ingredients together and let sit for 2-3 hours.
