But that's for a good reason: VG-10 isn't flexible. And since flex is a desirable element in a fillet knife, the experts at Shun decided to forge this knife from AUS8A high carbon stainless steel. This premium alloy has strength and edge hardness, and it resists wear. But it's also capable of just the right amount of flex, giving the user nice feedback and helping to release more meat from the bone. And by the way, it also makes a great general boning knife and slices like a dream. Otherwise, the Classic 7" Flexible Fillet Knife is indistinguishable from the rest of the line, with a handle bolster, D-shaped ebony PakkaWood handle and end cap.
