The Kasumi Titanium 7.75" Chef's Knife has a somewhat typical Western chef's profile, but overall, this knife is anything but typical. It features the Kasumi line's unique construction of a very hard (59-60° Rc) chromium vanadium steel core, wrapped in a tinted layer of slick and highly anti-corrosive titanium. The end result feels like using a vaseline-coated scalpel. In the hands of a professional, the Kasumi Titanium 7.75" Chef's Knife can chop, slice, dice and julienne with effortless speed. Use it for vegetable and light protein prep all day long, or keep it by your station at service for super-clean sliced presentations. The edge is as pleasing to use as any premium Japanese blade and retention is excellent. The contoured polypropylene handle is seamless, hygienic, comfortable and it offers a high degree of control. The titanium outer shell is non-reactive and very protective, making the Kasumi Titanium very easy to maintain. And that makes it a good choice for home use, particularly where a slightly lighter blade is preferred.
