This forged, 16-layer damascus-style knife features superior Japanese VG-10 steel construction and a traditional profile. The blade is ground thin, hand sharpened, hand hammered and polished to a spectacularly sharp, and extremely hard edge. The Santoku is a versatile knife, but it's forte is making straight, clean, precise cuts. It is one of the best all-purpose/vegetable designs you could hope to use. Choose from 5 or 7" sizes. The Kikuichi Tsuchime Damascus line is stain-resistant for fairly low maintenance and carries the manufacturer's lifetime warranty. Made in Japan.
