Needing a partner with experience in cutlery production and forging Bob turned to Germany's Zwilling J.A. Henckels, a 200 year old Cutlery Company in the small town of Solingen. "It's old school meets new school". The Euro Line is built to the same specifications as Bob's highly-coveted custom knives. They use high quality 52100 carbon steel, 60-61 HRC, unique brass bolsters and real wood handles. Carbon steel blades take and hold there edge better than stainless. Carbon steel kitchen knives were the standard a few decades ago and preferred by professional chefs worldwide, but home cooks shied away from carbon steel and that is how stainless steel cutlery grew in popularity in the U.S. While carbon steel knives require some simple maintenance and acquire a grayish patina over years of use, they are superior to steel blades when it comes to function. Simply put, the edge of a carbon steel blade is sharper, it holds its edge longer and it is easier to put an edge back on the extremely fine grain structure of carbon steel.
Hand-crafted by artisans in Seki City, Japan, the Kramer by Zwilling Euro Line is hand-made from start to finish with a few industrialized processes which expedite the manufacturing of the blades.
