The Shun Blue Steel 6" Utility and Butchery Knife is a brilliant boning specialist that can also be used for simple prep all around the kitchen. The 6" "san mai" blade has a carbon steel cutting core, wrapped in polished stainless steel that adds support and greatly reduces the maintenance required by traditional carbon steel knives. An old-school rabbet tang with octagon Pakkawood handle offers very good balance and adds a nimble feel through many regular and overhand grips. Use it for jointing and boning out leg of lamb, pork, duck, poultry or even filleting most varieties of round fish such as salmon and grouper.
Please note that the exposed carbon steel edge will develop a desirable "blue steel" patina with use, and simple care will be required to prevent rusting. Every Shun Blue Steel Knife includes its own custom-fit saya (sheath) and is backed by the manufacturer's lifetime warranty. Hand wash only. Shun Blue Steel Knives are handmade in Seki, Japan
