The Shun Blue Steel Kiritsuke Knife has a traditional and brilliant design that is highly versatile to take on any kitchen task. The Kiritsuke is a fine-edged blade with a Rockwell 61° blue carbon steel core clad on both sides by protective stainless steel. The edge is beveled on both sides at a scant 16°, somewhat straight at the heel, but develops a gentle curve as it approaches the tip. The spine is straight until it breaks to meet the edge at a fine, sharp tip. Traditionally used only by Japanese Master Chefs, the Kiritsuke is an ideal all-purpose blade. Use it for chopping or rocking, slicing, crushing, mincing and dicing. The fine tip can be used for boning portioned meats and fish and other precise work. Traditional storage sheath is included. Produced in Seki City, Japan and backed by a manufacturer's limited lifetime warranty; also includes complimentary factory resharpening for the life of the blade. Hand washing recommended.
