The Shun Classic Pro Yanagiba Knife is a traditional "pull-cut" specialist that does one thing exceptionally well. Its sole purpose is to make incredibly clean slices. The Yanagiba, or "Willow Blade" is predominately used for the preparation of delicate sashimi and sushi because its cut is so fine, it will not cause bruising or loss of natural juices as the blade passes through. The blade is made from a stainless type of VG10 "super steel" and polished to a mirror finish. The traditional Japanese single-bevel design creates a seriously sharp 16 edge (comprehensive), with a hollow-ground back blade that minimizes drag as the knife pulls through. Ideal for slicing any raw or cooked, boneless proteins. And rest assured knowing that the Classic Pro Yanagiba includes free lifetime sharpening to maintain its razor-sharp factory edge.
