The Shun Classic Pro Deba is a traditional piece of Japanese cutlery that excels in light fish and poultry butchery, as well as vegetable prep. In Japan, it is primarily used to behead and fillet fish, cut through small bones and skin, bone-out poultry, cut and portion meat and a variety of other tasks that you'd typically use a chef's knife to perform. It has a wide blade with a bellied edge that is sharpened only on one side (single bevel). The back side of the blade is slightly hollow ground, resulting in extremely clean performance that is ideal for prepping delicate foods. But you may notice that the Deba's profile is much like a Santoku knife, and you will find that the Deba can offer similar versatility for slicing and chopping vegetables and fruits.
