Wusthof Classic Hollow Ground Santoku
The newly updated Wusthof Classic Hollow Ground Santoku is a versatile, all-purpose blade that is prized for the precise way in which it cuts. The deep blade glides through foods, and holds a straight line as it chops and slices through vegetables and raw or cooked boneless proteins. The Granton edge design enhances performance by creating air pockets that reduce drag and water adhesion, so slices are cleaner and less food sticks to the blade. Wusthof's Hollow Ground Santoku is unique to the Classic series because the blade is ground thinner and the edge is created with a scant 10° bevel per side. This makes for a very fine, razor sharp edge. The cutting performance is perfectly suited to most fruit, vegetable and boneless protein prep, but care should be taken with hard winter squashes and the blade is not recommended for cutting frozen foods or bones. The new Classic Series features the updated Trident logo inlayed on every handle and etched on every blade. Hand washing is highly recommended.
