The Damascus-type blade is fully-forged with a VG-Max cutting core and clad with 16 layers of stainless per side. The blade also receives a stunning, hand-hammered Tsuchime finish that keeps food from sticking and reduces drag when slicing. The razor-sharp, 16° per-side edge is honed and finished by Shun's master bladesmiths. The Premier Chef's Knife has a more Western profile, with a slightly deeper heel and more curvature to the tip, for proven versatility to take on most any job. The Shun Premier series also features a specially contoured handle, carved from premium walnut hardwood. The blade bolster and special Premier series end bolster provide flawless balance for sustained use with minimum hand fatigue.
