It is designed for professionals and for those who appreciate the unique qualities of fine carbon steel cutlery.

The Shun Narukami Chef's Knife is a fully-forged, full, tang, high performance blade made by the traditional Japanese "San Mai" technique, paired with Shun's proprietary Composite Blade technology. The combination of these old and new techniques ensure that the best quality steel is where it's needed- durable, supportive stainless steel at the upper and a very hard, tough and keen carbon steel at the edge. In short, San Mai + Composite Blade technology = the sharpest performance at the sharpest price.

The Shun Narukami series permanently bonds premium Japanese bead-blasted stainless steel to an exceptional Hitachi Blue II carbon steel edge. Hitachi Blue II is renowned for its ability to take a very sharp edge and hold it. The seamless, braze-welded joinery results in a wavy separation between the stainless upper and the Blue II carbon steel edge. Like all carbon steels, Blue II requires additional care to prevent rusting. Cleaning and drying immediately is key. With use and time, the edge will darken and develop a handsome, protective patina that contrasts the bright stainless upper. Hitachi Blue II holds a tough, keen edge. Even after hours of restaurant volume food prep, resharpening is a breeze, if it's even needed. This is why professional chefs prefer carbon steel, and if you love carbon steel, you’re going to love Narukami. Beautiful and practical micarta handles complete the package, with a clean, understated design that you can comfortably grip all day.
