The blade of the Miyabi Black 8" Chef's Knife is crafted from an ultra-premium micro-carbide MC66 powdered steel core, wrapped in 132-layer Damascus pattern with a beautiful katana edge.  This incredible design delivers scalpel-like precision and impressive cutting edge retention and corrosion resistance. MIYABI’s innovative, ice-hardening process locks in the long-lasting sharpness of these CRYODUR® blades, achieving an astonishing 66 Rockwell hardness! And the traditional Honbazuke edge is honed to the traditional 9.5° to 12° for exceptional sharpness. Beautiful to behold, the stunning flower Damascus pattern provides superior durability. Effortless to hold, the classic Japanese “D”-shape handle offers fatigue-free cutting. The striking handle matches the caliber of the blade. Made of splendidly swirled burls from North American Bigleaf maple, each handle is elegantly unique. Recognized as some of the sharpest knives in the industry, MIYABI Japanese cutlery is made to last a lifetime and even among them, the Miyabi Black 8" Chef's Knife is special.
