The Shun Classic 4.5" Honesuki Knife is a traditional Japanese knife for boning poultry. The Honesuki knife is ideal for removing bones from meat, fish, and poultry. The Honesuki's uniquely shaped, razor-sharp blade is made for maneuvering around bones and between joints. It can easily separate chicken breasts from the breast bone and cuts through joint cartilage like butter.

  • D-Shaped PakkaWood Handle provides both beauty and function. The "D" shape offers maximum comfort and control. PakkaWood provides strength, stability, and moisture resistance. It is manufactured by impregnating hardwood veneers with phenolic, thermosetting resins and fusing them into a solid, wood-grained structure for premium applications.
  • VG MAX is the latest in the VG line of quot&;super steels.quot&; It builds on the highly successful VG10 and is proprietary to Shun. VG-MAX includes additional carbon to improve strength and durability and more chromium for wear and corrosion resistance. More cobalt enhances strength. Increased tungsten enables the steel to be very fine grained, so the edge can be extremely fine and sharp. Molybdenum improves corrosion resistance and strength. Vanadium improves impact resistance and enables the steel to form vanadium carbides, enhancing cutting performance. Shun hardens the VG-MAX in its knives to 60-61 on the Rockwell Hardness Scale, a standard measure of material hardness.
